WhatsApp lets you use the "Delete for everyone" option for up to 2 days and 12 hours (about 60 hours in total) after sending a message. Within that window, the message disappears from both your chat and the recipient's, and the notice "This message was deleted" appears in its place.

WhatsApp gradually extended it over time until reaching the current limit of almost two and a half days, which applies in the official app across all platforms (Android, iPhone and WhatsApp Web).

The "Delete for everyone" option doesn't delete the message from a central server: what actually happens is that your phone sends an instruction to the other person's phone telling it to hide that message in its copy of the conversation. For this to work properly, both devices need to be within a reasonable time window.

If the deadline were unlimited, anyone could retroactively alter a conversation weeks or months later, even in chats that have already been backed up or used as a reference for something important. That's why WhatsApp sets a generous but limited window: it gives you plenty of time to fix a mistake, without leaving the door open forever.
